Blue crab

The blue crab (Cardisoma guanhumi) is part of the local gastronomic culture of the Caribbean, however it is threatened by overexploitation and the destruction of its habitat. At Easter*, a time when their consumption skyrockets, thousands of blue crabs are caught, traded at ridiculous low prices and consumed, which is leading to a continually decreasing population of crabs.

In Jaibazul there are approximately 1,500 square meters of mangroves that have been preserved. Today they are home to the blue crab, where it recovers from years of indiscriminate persecution and exploitation.

Being on private property, the blue crab population can thrive protected from poachers.

* During the Catholic Holy Week, the consumption of red meat is prohibited
